Chicken and veggies cook together on one pan with a simple spice mixture that my kids can help make. They're delicious the first night wrapped in tortillas, and we all love the leftovers over the next few days repurposed as quesadilla filling, on nachos, over rice, or all alone!

Not only is it fast, but super healthy and just uses a few ingredients. I like to pair this with some oven-baked rolls which you can add during the last few minutes of the chicken baking time.     Kristy Pepping:  This was a big hit for my family, super easy to make and just as fast. Basically, you cut slits in chicken breasts and stuff with various vegetables. Top with cheese, then stick in the oven and bake. We did use the suggested veggies mentioned, but you could certainly use any you have on hand. From Delish
