Ravioli Lasagna
Kelly R: You don't need a bunch of specialty ingredients to make a tasty lasagna. Frozen ravioli, ground beef, spaghetti sauce and shredded cheese are all you need to make this easy layered pasta recipe the kids can help make. From Taste of Home
Charcuterie
Kelly R: This is one of my favorite easy vacation meals that we always make toward the end of the trip when it's time to use up everything in the kitchen. Just assemble a platter with an assortment of your leftovers: cured meat, nuts, crackers, olives, pickles, jam, pretzel chips, cheese, fruit, raw veggies, etc!
Chicken Caesar Wraps
Kelly R: Wrap store-bought bagged Caesar salad and chicken in a tortilla. This works great with leftover grilled chicken, frozen chicken strips, or even shredded rotisserie chicken. Serve with fruit for a well-rounded easy vacation meal!
Easy Slow Cooker Pulled Pork
Kelly R: If your rental has a slow cooker, pulled pork sandwiches are of the best easy meals for large groups on vacation, or when you want plenty of leftovers to use throughout the rest of your trip. From The Magical Slow Cooker
Bagels and Cream Cheese
Michael Farina: Looking for an easy breakfast, but "cereal" is off the table because transporting a gallon of milk on the long drive is problematic? Try bagels and cream cheese. There are many fresh and frozen options of bagels, many flavors of cream cheese, and a number of options to kick it up a bit -- peanut butter, strawberry or banana slices, lox, etc.
