Chicken Parmesan Baked Ziti
christadiserio: This baked ziti recipe is a must-try. There's very little prep involved and the dish can be thrown into the oven while you help the kids with homework. Instead of cooking chicken breasts, you can also buy a rotisserie chicken, which shreds nicely, too. Pair this with a side salad and you've got yourself a tasty & healthy (more importantly: easy) meal!
Chicken Taquitos
Alexandra F.: Taquitos are my go-to meal for using up leftover rotisserie chicken - even my picky eaters love them, and they are easy to make when you are short on time. Shred or cut the chicken into small pieces, roll some into a tortilla (corn is traditional but flour is also good), then fry it in vegetable oil about an inch deep. I warm the tortillas in the microwave covered with a damp paper towel to keep them from cracking, and a toothpick through each taquito helps hold it together when you first put it in the oil. Serve plain, with sliced avocado, shredded lettuce, salsa, cheese, crema or whatever you like!
Chicken Fried Rice
Alexandra F.: Ever since I discovered how easy it is to make fried rice, we've started buying rotisserie chicken whenever we are at Costco to make sure we have some to add to the fried rice we make almost every week. I started out using this recipe, and I like it, but I've realized that fried rice is one of those awesome pantry recipes you can easily adapt with whatever you have on hand, and that exact measurements are definitely not necessary if you want to keep things moving. Keep a bag of frozen peas and carrots on hand to make this an especially quick and easy meal!
White Rotisserie Chicken Chili
Shila: An excellent family meal for busy weekdays, this calls for simmering a handful of ingredients and spices together, including canned white beans, canned green chiles, frozen corn and shredded rotisserie chicken. Top off this one-pot meal with freshly-diced avocado, tortilla chips, cilantro and lime.
