    Genius Butternut Squash Soup

    Kelly R:  I love making blended soups for my family, because they're easy and can discreetly contain a lot of healthful ingredients. This vegan butternut squash soup is delicious, and requires almost no effort. The squash goes into the oven whole (no squash cutting kitchen accidents!) and once roasted is pureed in the blender with coconut milk and a few other simple ingredients.

    Detox Chicken Soup

    Kristy Pepping:  This soup is a huge hit for the entire family! It is super easy to make. I will add my family hates mushrooms and kale so this recipe can easily be modified. We added stewed tomatoes and zucchini instead.

    Carrot-Coconut Soup

    Kelly R:  My kids love this soup, and doubling or tripling it is my favorite way to use up a big bag of carrots. It freezes really well for a quick and healthy weeknight dinner.

    I substitute sweet chili sauce for the spicy kind the recipe calls for, but you could also leave it out with great results. From Bon Appétit

    Minestrone Soup

    Kate Wille Murray:  Minestrone soup is a family favorite!

    1 lb mild Italian Sausage
    1tbs olive oil
    1 c diced onion
    a clove finely minced garlic
    1 cup sliced carrots
    1 tsp basil
    2 small zucchini sliced
    1 can Italian tomatoes, diced
    1 box beef broth
    1/4 tsp pepper
    2 cans Great Northern Beans
    1 cup tubettini pasta

    Brown sausage and drain grease. Combine all ingredients expect beans and pasta. Bring to a boil. Cover and let simmer for 1 hour. Add beans and pasta and simmer for 10-15 minutes. Soup thickens on second day.

    Roasted Cauliflower and White Cheddar Soup

    Kelly R:  Roasting the cauliflower first for this recipe gives the soup such a complex and wonderful flavor, despite the relatively short ingredient list. It's worth the little bit of extra effort! We love this with a pretzel roll on the side for dunking. From Mel's Kitchen Cafe

    Black Bean Soup

The flavor is simple yet tasty, and the refried beans give the soup a really nice texture. This lasagna soup is one of my favorites. It has the classic lasagna taste that everyone loves, lightened up with chicken sausage and just a dollop of cheese on top. I especially like that it's really easy to prepare, with the bulk of my time going to cutting the beef into small pieces. After that, it's mostly dumping all the ingredients into the pot, with minimal chopping.
